Egg Roll in a Bowl
Prep Your Veggies
Finely chop 1/2 yellow onion, 2-3 cloves garlic, and shred half a head of green cabbage and a few large carrots
Cook the Onions and Garlic
On medium-high heat, with a little avocado oil on the pan, cook your garlic and onions for 2-3 minutes (stir every 30 seconds to prevent burning your garlic!)
Dice and Cook the Chicken
Cube up 2 chicken breasts and add them to the pan with 1/2 tbsp salt, garlic salt, and onion powder (cook for about 5 minutes/until you don't see any more pink)
Add in the Veggies & Sauce
Add the cabbage and carrots, as well as the secret sauce: 1/4 cup coconut aminos, 2 tbsp sesame oil, a drizzle of honey, 1 tbsp garlic salt, onion powder, salt, a splash of rice vinegar)
Cover and Let Cook
Toss everything in the sauce, turn the heat down to low, and let it cook for at least 10 minutes (longer for softer veggies)
Add some rice (or don't), top with green onions, and enjoy!
Optional: make an extra side of the sauce to drizzle on top
Tip: Double the sauce recipe if you want your bowl to be extra flavorful
